Comment créer? Un parfum de praliné s’élève, une forme se précise. La pâtisserie, ce n’est pas de la magie, plutôt une alchimie. Le chef François Daubinet est passionné par la matière et si curieux que son inspiration s’anime au contact de nombreux métiers d’art. Dans ce livre, il partage 10 histoires de création.

Chaque pâtisserie est le fruit d’une rencontre et aboutit sur un travail d’orfèvre collectif. Souffleur de verre, artiste de street art, maître fromager, couturière, horloger, joailler, boulanger, céramiste: auprès des artisans d’art, François Daubinet repousse les limites de la haute pâtisserie. Des premiers croquis aux recettes, en passant par les tests, les réflexions et les contraintes techniques, ce livre dévoile les différentes étapes du processus de création, à quatre, six, huit mains… sans compter l’œil de la photographe Géraldine Martens et la plume de Victoire Loup.

On découvre ainsi l’univers artistique d’un chef pâtissier audacieux, qui nous offre enfin une boîte à outils de recettes de base pour trouver l’inspiration.
