After Como funciona elbulli, Noma, and Never Trust a Skinny Italian Chef, Phaidon publishes Mexico from the Inside Out, a book by chef Enrique Olvera, pioneer of authentic Mexican contemporary cuisine and one of the most influential chefs in the gastronomy world.
His restaurant Pujol in Mexico City is one of the main references of the current gastronomy of his country and appears every year within the list of the 50 best restaurants in the world.
He just opened a restaurant in New York, Cosme.
The book covers Olvera’s creative process through 65 recipes divided into Cara A (the most sophisticated recipes that can be found in Pujol) and Cara B (simpler recipes that he enjoys eating at home with his family and friends and serves in other restaurants in Mexico City).
