In this bilingual book (French and English) the chef reveals technical purposes and his vision of this discipline-clean, contemporary, and unique. He also reflects his mastery and love for the trade through 50 signature recipes, going from classic butter croissants to pain au chocolat, vegan brioches, or the vanilla-chocolate crown.

One of the most interesting things about this book is that it contains QR codes that lead to videos showing the key stages, rolling and kneading methods, and even large-scale pastry templates.
