Cet ouvrage richement illustré nous invite dans les coulisses de la Maison Weiss, l’une des plus anciennes chocolateries françaises. Depuis l’ouverture de la première boutique en 1882, Weiss produit ses chocolats de la fève à la tablette et développe l’art de l’assemblage. Partez à la rencontre d’Eugène Weiss, le fondateur visionnaire et audacieux, suivez toutes les étapes de fabrication des chocolats, comprenez comment sont pensés les assemblages et tombez sous le charme des spécialités protégées dans leurs écrins enrubannées d’argent. Les maîtres chocolatiers Weiss sélectionnent avec savoir-faire les meilleures fèves, associent les cacaos de plusieurs origines, imaginent le goût des grands chocolats, et… inspirent les plus grands pâtissiers et artisans créateurs du monde entier!

Cet ouvrage regroupe plus de vingt d’entre eux : chefs pâtissiers, MOF, chefs de restaurant, pâtissiers de palace ou de boutique, tous ont eu carte blanche pour donner leur vision du chocolat en s’inspirant des assemblages Weiss et pour livrer des recettes aussi généreuses et audacieuses que gourmandes.
