Dos Palillos

A total of 400 pages was needed by the former head chef of elBulli, Albert Raurich, to condense ten years of intense culinary activity in front of Dos Palillos restaurant in Barcelona. As defined by Ferran Adrià himself, it is the most important Asian restaurant outside of Asia, something that is corroborated over the more than 200 recipes shown in the book.

This meticulous book has a first part that thoroughly explains the culinary career of Albert Raurich and the people who have most influenced and helped him, from Adrià himself to his wife Tamae. The book also includes a section of basic recipes as well as a very careful and interesting glossary of concepts, techniques, and Asian creations.
