Macaron - Pierre Hermé
A complete repertoire in terms of bases, variety, and possibilities signed by the master of masters of this emblematic French dough
Citrus caviar macaron, licorice and violet macaron, chocolate macaron and pure malt whiskey, wasabi cream macaron, and strawberry jam ... In over sixty recipes, Pierre Hermé offers us the Macaron bible.
In a few years the standard-bearer of French pastry has been able to add a touch of taste and modernity to his profession. And he has erected the macaron - "those few grams of happiness," as he likes to call them - an icon of the twenty-first century. Pierre Hermé reinvents the classic pairings, surprises with combinations of audacious flavors and invites us to discover his more recent creations: the "Velvets", stuffed with a yogurt ganache, and the "Gardens", ephemeral macarons that he casts off over the months. Unique and easy-to- make recipes thanks to basic techniques and the tips that the teacher details step-by-step and in images.

It´s the first book that I am disappointed with. I was expecting an introduction about the "science" of making macarons, details about troubleshooting or perfecting the macarons, since it´s a product that it´s somewhat more technical. There is nothing about these things in the book. Only recipes and the same descriptions about the "making of" throughout the whole book. It just looks like all pages were copy-pasted. Plus the pages that have the recipes have huge white areas, where it would have been nice to have some pictures. Not impressed, Pierre Hermé.
